In our lab we explore natural yeast populations to understand genome evolution and adaptation, particularly in yeast associated with primary forests in Patagonia. Using these biological resources, we develop novel strains and hybrids for the beverages industries, identifying key genomic changes underlying environmental adaptation to anthropogenic niches.
